What style of food is served?

the Kitchen is a modern American restaurant. We serve all natural meats,sustainable fish and fresh vegetables. We offer a crudo( sliced raw fish and oysters)bar, salads, fresh pasta, grass fed beef, cocktails and a extensive wine list.

What is foie gras butter?

We take grade A foie gras( goose liver) and mix with organic butter, it is mounted into our sauce for the wagyu flank steak. Unctous and delicious.

What is wagyu beef?

Wagyu is literally japanese beef. It is full of flavor. We source ours from a small farm in nebraska. 100% wagyu raised in the USA.

What is grass-fed beef?

This is the natural feed for livestock.Unfortunately, most meats raised in the US are fed grains and steroids( all kinds of nasty in them).The meats at the Kitchen are all hormone free, natural, free range, full of flavor and health benefits that occur naturally.

Why is sustainability so important?

Chefs need to be aware of this as we choose our products for our menus. Using fish like line caught cod and mackerel are good choices because they are still plentiful in the oceans. choosing sustainable products assure that our children will be able to eat and enjoy as we did. Is your salmon farmed or wild?

Well, the answer is both. During the king salmon season we like to get wild salmon. However,since not always available we use a farmed tasmanian salmon and other salmon that is farmed inland, away from the oceans to ensure the fish will never mingle with its wild cousins.. This is sustainable, clean and healthy option. The taste is unbelievable as well.
